Black Spruce

Picea mariana

Picea mariana, commonly known as “Black Spruce”, is a widely distributed conifer of the northern parts of North America. Black Spruce is generally slender than White Spruce, with a top tuft of branches. Its lightweight and strong wood is yellow-white in color, being one of the most important pulpwood species of Canada. This slow-growing species is moderately shade tolerant and can grow under conditions of low nutrient availability.

Black spruce gum can be chewed for endurance while running. When the spruce gum is white it can be used to treat infected wounds or prevent cuts from becoming infected [23]. The tip or bud of the young spruce branch can be peeled and eaten to treat heart problems. The young cones can be boiled to make a mouth wash for mouth infections, toothache, or sore throat or to clear phlegm from the throat.

Clary Sage

Salvia sclarea

Clary sage is a biennial plant, native to southern Europe that easily self-seeds in the garden. The winter rosette has a relatively mild fragrance, but the entire inflorescence, reaching up to 39 inches (1 m) in height and displaying white or pink flowers accompanied by leafy bracts, possesses a distinct and overpowering amber-lavender scent. The leaves are broadly ovate, with a heart-shaped base, and measure approximately 3 to 5 inches (8 to 14 cm) in length. While some forms are characterized by long bracts, the seed offerings of this variety in the market do not differ significantly from standard clary sage seed lots [37].

The herb’s traditional use for cleansing the eyes has led to its specific epithet—meaning “clear”—as well as its common name. Traditionally, these particular species have been employed as therapeutic agents to address inflammatory conditions such as gingivitis, stomatitis, and aphthae, as well as to alleviate symptoms of the common cold and neurasthenia, enhance lactation, and inhibit excessive perspiration [31]. The seeds become mucilaginous when exposed to water and were once utilized to remove small dirt particles from the eyes. Clary sage imparts a muscatel flavor to alcoholic beverages and is employed to flavor wines, vermouths, and liqueurs, earning it the alternative common name of muscatel sage [31].

Shell Ginger

Alpinia zerumbet

Alpinia zerumbet commonly referred to as “shell ginger” in English and “getto” in Japanese, is a perennial plant indigenous to the subtropical and tropical territories of East Asia. Specifically, its distribution encompasses the Nansei archipelago, which is situated amidst the Pacific Ocean and the East China Sea in Japan. Shell ginger is a perennial herbaceous plant characterized by its rhizomes, which exude a distinct ginger aroma when sliced. The plant exhibits bifacial, slender leaves that span approximately 2535 cm in length. Often cultivated as a compact indoor plant, its beautiful flowers display a pink hue in their budding stage and bear a resemblance to seashells. The spherical fruits of A. zerumbet feature striations and transition from an initial yellow hue to a vibrant red as they reach maturity.

Historically, the seeds of A. zerumbet have been employed as medicinal herbs, believed to possess intestinal-regulatory properties. Furthermore, the plant’s stems serve as a valuable resource for paper production in various industries, while its leaves and rhizomes are commonly utilized in the preparation of herbal teas and as spices, respectively [2]. In Okinawa, it was once customary to utilize the leaves as a wrapping material for portable foods, as well as for steaming buns and rice cakes. The practice of enveloping the traditional rice cake, muchi, in these leaves continues to this day. The people of Okinawa, a region characterized by high temperatures and humidity that accelerate food spoilage, have acknowledged the antiseptic and antibacterial properties of A. zerumbet [35].
